Traditional catering service providers hardly use large-scale refrigeration; leading to sub-standard quality meals and illness eventually. To make matters worse, even the general storage areas may be infested with rodents and other pests.
Our store room is capable of stocking supplies to last for a month. But we maintain a 15-day stock based on the menu that is decided.
We don't short change our standards by substituting ingredients just because they have run out of stock.
